Tofu Special Part 2 – How to make Tofu Salad


Tofu is one of those super versatile foods that you can use in almost any recipe and a Tofu salad is particularly good for vegans or vegetarians, it also has a lot of nutritional value and is a perfect substitute for meat. In this post, we explain an effortless yet delightful tofu salad recipe, which is a Japanese classic and has been passed down through the generations.

The Dish

With its combination of Chinese cabbage, soy-based dressing and Tofu, it is an easy and sophisticated side dish for your dinner party, home meal or even as a tasty light snack.

The Recipe

For the Salad:

  • 1 Pack of Tofu (approx. 200g is enough for 2 servings)
  • Mizuna or Japanese mustard greens – Looks like long thin lettuce leaves (use enough for your serving dish)

Chinese Style Dressing Ingredients:

  • 1 Tablespoon of vinegar
  • 1 Tablespoon of soy sauce
  • 1/2 Teaspoon of sugar
  • A dash of Olive Oil
  • 2 Tablespoons of sesame oil
  • A few shoots of Spring Onions (finely diced)
  • Salt and Pepper to season


Step 1 – Slice the Tofu into cubes of equal size.

Step 2 – To absorb as much moisture as possible from the Tofu, lay a paper towel on either a large plate or tray. Place the individual Tofu slices around the surface of the paper towel, and then cover these with an additional towel on top. To apply some pressure to the top of the paper towel covering the Tofu, place another tray or object with minimal weight on top, then leave it to sit for 20 minutes.*

*Absorbing as much moisture from the Tofu helps to avoid it mixing into the salad dressing.

Step 3 – Cut the Japanese mustard greens into lengths of 5-6 cm. Place these inside a bowl of cold water and let it sit for about 20 minutes or until crisp. Drain the water off the greens it, and lightly wipe off any excess water with a paper towel.

Step 4 – In the meantime, you can start to prepare the salad dressing. In a small bowl, add the vinegar, soy sauce, sugar, salt and pepper, and mix in together well with a spoon. Once the sugar is dissolved, gradually add sesame oil to the mixture while stirring well until everything is combined. Finally, add the finely sliced onion to the mixture.

Step 5 – Remove the tofu from the paper towels and add this, plus the greens and the dressing together in a serving bowl and mix delicately. Season with salt and pepper if required.
